Mini Donut Maker Expands from Tasty Bites to Bake Shop

Jack Mikolay started out with mobile events and eventually turned his mini donut making business into Mik's Bake Shop adding coffee, cupcakes, and other sweet treats to the menu.

As you enter Mik’s Bake Shop you sense the sweet aroma of fresh baked mini donuts, you taste the moist red velvet cupcake and the naturally crushed strawberries blended into a thick refreshing smoothie.

Mik’s Bake shop offers 60 variety of cupcakes to choose from baked daily from scratch.  Just last week the shop introduced the pumpkin pie cupcake with cinnamon cream cheese frosting. When you eat it you will notice the mini pumpkin pie in the middle of the cupcake.  

Using his mini donut making talent, Jack Mikolay, owner of the shop, first did mobile events when he was called Mik’s Tasty Bites. His donuts and smoothies became more and more popular as he set up his stand at schools and parties.

“You want to serve them the best food you possibly can so that makes them a return customer and they can tell other people about it. We feel we’ve been pretty successful about that, we got a lot of referrals and people that come in and say you know ‘I was over at my neighbors and they had your cupcakes and I thought they were great.’”

The idea of starting a business for his baked goods came when someone from the village told him he should open a donut shop since there weren’t any fresh donut shops around town.

At first he was skeptical of the idea because so much time, effort, and investments goes into starting a business. His biggest issue was figuring out costs, finding a location, and most of his time went to modeling the business.

“[Another issue was] what kind of sales then we thought we could expect, so we did a lot of modeling to make sure we thought it was viable business,” Mikolay said.

 Mikolay knew that just selling mini donuts and smoothies wouldn’t cut it, so he expanded the menu to items he knew he could make. He added locally roasted coffee, gourmet cakes, cookies, brownies, and other sugary goods.

After three years of planning and visiting locations, Mik’s Bake Shop was established in 2011 on 4025 US Highway 34 in Log Cabin A.

The shop has been popular with orders for Christmas and birthday parties as well.

“We also do cupcake cakes where we can take 24 cupcakes and put a layer of butter cream over it and decorate it just like a cake,” Mikolay said.

Several menu ideas have come from the web and customers. The RumChata flavor was once mentioned to Mikolay and he had it out two weeks later.

Mikolay feels that the shop has given him a chance to be a part of the community as he tries to give back as much as possible.  

“We do a lot of donations. We just did one[recently], we donated 5,000 donuts and applied our certificate that they’re going to auction off as the cubs scout troop 48. We’ve literally written checks for hundreds of dollars for schools as well.”

Holiday flavors such as apple pie, black forest, gingerbread, and peppermint will be around as Christmas time approaches.
